Our farm is in Lana, South Tyrol, now managed by Josef in its third generation.
On 8 hectares of cultivated land, we have been growing our red-fleshed apples alongside traditional varieties since 2013.
With experience and personal commitment, we accompany their journey from the first budding to the harvest, placing the highest value on quality and meticulous production. Many steps are carried out by hand – because every single apple deserves our full attention.
The Future

To secure the growing demand in the coming years, we invest annually in new apple orchards, the renewal of existing ones, and additional acreage. These measures ensure that our high quality standards can be maintained well into the future.

From Tree to Glass – how Sparkling Rocco is crafted
Our Sparkling Rocco is crafted with the utmost care to preserve the varietal flavor and vibrant color of our red-fleshed apples. Every step of our process is focused on quality and sustainability.

1. Harvest and Selection
The red-fleshed apples are harvested by hand in late September at their peak ripeness. Their intense color and unique flavor form the foundation for the freshness and character of our Sparkling Rocco.

2. Pressing and Juice Extraction
After careful washing, the apples are gently pressed. During this process, we ensure that the natural color and aromas are fully preserved.

3. Storage
The freshly extracted juice is stored in chilled, sterile tanks until it is further processed.

4. Filtration and Carbonation
Before bottling, the juice is gently filtered to preserve its vibrant red color. It is then carbonated over several days using a pressure tank process – always under controlled cooling.

5. Bottling and Pasteurization
In the next step, the juice is filled into our bottles and capped.
To ensure the shelf life of Sparkling Rocco without the use of preservatives, we carefully pasteurize the juice at 82°C. This guarantees a shelf life of up to two to three years.

6. Labeling and Packaging
After pasteurization, the bottles are cooled with cold water, dried, and labeled. They are then packed into cartons, palletized, and ready for delivery to our customers.
