INGREDIENTS:
- Tequila - 60ml
- Grapefruit syrup - 45ml
- Top up with Sparkling Rocco
- Garnish: Wild violet blossom
How to prepare the grapefruit cordial:
- 1-2 extra large grapefruits (ruby red, if available)
- 2-3 lemons
- 1 cup granulated sugar
- Wash the grapefruit by hand in warm water and dry with a towel.
- Peel the grapefruit and store it in the refrigerator.
- Squeeze the lemons and grapefruit, strain the juice and measure out to 1 cup.
- In a small nonreactive pan, add the juices and sugar (1 cup each), stir, and heat slowly to 185 degrees Fahrenheit, stirring frequently.
- Remove from heat and allow to cool to room temperature.
- Take the reserved grapefruit peel and chop it in a blender (or with a sharp knife), then add it to the cordial.
- Place in the refrigerator overnight, stirring once or twice, then strain into a clean glass jar.
- It will last up to 6 months in the refrigerator.
FINAL INSTRUCTIONS:
- Fill a mixing glass with ice cubes.
- Add the tequila and grapefruit cordial.
- Use a long bar spoon to gently but continuously stir the mixture for about 20-30 seconds. Stirring will chill and dilute the cocktail without the need for vigorous shaking.
- Strain the stirred mixture into a chilled cocktail glass. You can use a Prosecco Coupes or a Rocks Glass, top up with Sparkling Rocco.
