INGREDIENTS:
- Tequila - 60ml
- Grapefruit Syrup - 45ml
- Top up with Sparkling Rocco
- Garnish: Wild Violet Blossom
How to prepare the Grapefruit Cordial:
- 1-2 extra large grapefruits (ruby red, if available)
- 2-3 lemons
- 1 cup granulated sugar
- Wash the grapefruit by hand in warm water and dry it with a towel.
- Peel the grapefruit and store it in the refrigerator.
- Squeeze the lemons and the grapefruit, strain the juice, and measure out 1 cup.
- In a small, non-reactive pan, add the juices and the sugar (1 cup each), stir, and heat slowly to 85 degrees Celsius, stirring frequently.
- Remove from the heat and let cool to room temperature.
- Take the reserved grapefruit peel and chop it in a blender (or with a sharp knife), then add it to the cordial.
- Refrigerate overnight, stirring once or twice, and strain into a clean glass container.
- In the refrigerator, it will keep for up to 6 months.
FINAL INSTRUCTIONS:
- Fill a mixing glass with ice cubes.
- Add the tequila and the grapefruit cordial.
- Use a long bar spoon to gently but continuously stir the mixture for about 20-30 seconds. Stirring cools and dilutes the cocktail without the need for vigorous shaking.
- Strain the stirred mixture into a chilled cocktail glass. You can use a Prosecco coupe or a rocks glass, and top it off with Sparkling Rocco.
