INGREDIENTS:
- Gin-50ml
- Lemon juice - 35ml
- Wild berry syrup - 30ml
- Top up with Sparkling Rocco
- Garnish: spring mint, dried red apple
How to make the wild berry syrup:
- Boil the berries and sugar. In a medium saucepan, combine the berries, sugar and water.
- Bring the mixture to a boil, then mash with a potato masher and stir while it cooks for 2 minutes.
- (Optional: If you don't like seeds or chunks in your syrup, strain the syrup through cheesecloth to remove the seeds, then return it to a clean pot.)
- Remove the syrup from the heat and let it cool for a few minutes.
FINAL INSTRUCTIONS:
- Fill a cocktail shaker with ice.
- Add gin, wild berry syrup and fresh lemon juice to the shaker.
- Shake vigorously for about 10-15 seconds to cool the mixture.
- Strain the mixture into a chilled glass filled with ice cubes.
- Top it up with Sparkling Rocco.
- Stir gently to combine all ingredients.
- Garnish with mint and dried red apples.
