INGREDIENTS:
- Gin - 50ml
- Lemon juice - 35ml
- Wild berry syrup - 30ml
- Top up with Sparkling Rocco
- Garnish: Spring mint, dried red apple
How to make the wild berry syrup:
- Cook the berries and sugar. In a medium-sized pot, mix the berries, sugar, and water.
- Bring the mixture to a boil, then mash and stir with a potato masher while it cooks for 2 minutes.
- (Optional: If you do not like seeds or pieces in your syrup, strain the syrup through a cheesecloth to remove the seeds, and then return it to a clean pot).
- Remove the syrup from the heat and let it cool for a few minutes.
FINAL INSTRUCTIONS:
- Fill a cocktail shaker with ice.
- Pour gin, wild berry syrup, and fresh lemon juice into the shaker.
- Shake vigorously for about 10-15 seconds to cool the mixture.
- Strain the mixture into a chilled glass filled with ice cubes.
- Top it off with Sparkling Rocco.
- Stir gently to combine all ingredients.
- Garnish with mint and dried red apples.
