INGREDIENTS:
- Raspberry Vodka 60ml
- Freshly squeezed lime juice 15ml
- Top up with Sparkling Rocco
- Garnish: spring mint, raspberry
How to prepare the raspberry vodka:
- Raspberries - 500 g
- White caster sugar - 250 g
- 1 vanilla pod
- Vodka - 1L
- Put the raspberries, sugar and vanilla in a glass.
- Pour the vodka into the glass.
- Close the lid, turn the jar upside down and shake well to distribute the sugar evenly.
- Make sure the jar is sealed and store in a cool, dark place, turning/shaking once a day for the first week.
- After 2-3 weeks, you can strain the vodka through a sieve lined with coffee filter paper or a clean kitchen towel. Pour the vodka back into mini bottles. The vodka will keep its pink color for a few months, but will be drinkable for 2 years.
FINAL INSTRUCTIONS:
- Fill a copper mug or highball glass with ice cubes to chill.
- Pour 60 ml of vodka raspberry over the ice.
- Squeeze the juice of half a lime (about 15 ml) into the cup or glass.
- Top up with 120-180 ml of Sparkling Rocco. Depending on your taste preferences, you can add more Sparkling Rocco if you prefer a lighter cocktail.
- Stir the mixture gently to combine the ingredients.
- Traditionally, mules are served in copper mugs, which make the drink even colder and more presentable, but if you don't have a copper mug, a highball glass works great too.
