INGREDIENTS:
- Vodka- 60ml
- Top up with Sparkling Rocco
- Raspberry yoghurt foam
- Garnish: Dried red apple
- Raspberry powder
How to prepare the raspberry yogurt foam:
- Raspberry yoghurt
- 400ml water
- Orange blossom water 15ml
- Vanilla extract - 10ml
- White sugar - 500gr
- Citric acid - 7,5gr
- Mix the yoghurt with the water. Let it sit at cold temperature for 36 hours.
- Use a coffee filter to separate the large particles from the small ones.
- Add the remaining ingredients to the mixture.
- Dilute between 200 and 250 ml of Cordial with 250 ml of water and sweeten to your taste.
- Pour the mixture into a whipped cream dispenser and press twice.
- Allow to rest in the refrigerator for at least 30 minutes before consumption.
FINAL INSTRUCTIONS:
- Fill a glass (usually a highball or Collins glass) with ice cubes to chill it.
- Pour 60 ml of vodka over the ice.
- Top up with Sparkling Rocco.
- Stir the mixture gently with a long spoon or stirring stick.
- Pour your homemade raspberry yoghurt foam over it.
